GOOD MORNING SAIGON
06:00: Pick up at your hotel and transfer to the park opposite to the New World Hotel to see and join the locals, practicing Tai Chi. After your “exercise”, visit the north entrance of Ben Thanh Market to witness the busy morning hours with sellers setting up their stands and commencing business (fish, meat, vegetables, fruits, flowers, etc.).

CHINATOWN discovery
Discover District 5, also known as Cholon, Saigon’s former Chinatown. Visit Cha Tam Church which has a connection to the fate of the former South Vietnam’s president Ngo Dinh Diem and then visit the Cao Dai church in District 5, the seat of the Cao Cai sect Sangha in Ho Chi Minh City.
Our next stop is the museum of Vietnamese traditional medicine (FITO), the only museum of its kind in Vietnam. The FITO has more than 3,000 items including traditional tools and medicine books as well as miniatures of typical northern and southern medicine houses on display. The museum building and its interior reflect the skilfulness of local artisans.
Continue to visit Binh Tay Market, the central market of Cholon, trading daily goods coming from all directions of Southern Vietnam. Your Chinatown discovery ends with a one-hour cyclo tour through Cholon, including a visit to Thien Hau Pagoda and a stop at a local medicine vendor to learn more about the traditional way of healing.

COOKING CLASS AT THE VIETNAM COOKERY CENTRE
A visit to Vietnam is a memorable experience and with the help of the Vietnam Cookery Centre you will be able to bring back home some of those memories. Prepare traditional Vietnamese dishes and re-experience authentic delightful Vietnamese cuisine together with your family and friends.
In the morning course, you will learn more about the most popular Vietnamese dishes. You will be taught the correct blending of the many ingredients and spices to create the famous "nuoc mam" (fish sauce). You will also learn more about the cooking of the multitude of different rice.
Apart from the preparation and cooking under the Chef’s guidance, you will be introduced to the traditional Vietnamese kitchen with cooking utensils, which still resemble the Vietnamese way of life. You will learn about the oriental science of Yin-Yang (even applied in cooking) and the history of Vietnamese cuisine with its roots in the Imperial City of Hue and its various influences from both Western and other Eastern cultures. SAIGON 'VIETNAMESE STYLE'

THE PHO TRAIL – A MORNING WALKING TOUR
Meet your eating guide in the foyer of your hotel for the taxi ride to the tour area in Ho Chi Minh City's Binh Thanh District.
08:45 hrs: Arrive at the first stop, Barbara and Vu's favourite pho restaurant, for a breakfast of pho and Vietnamese coffee (or juice).
09.30 hrs: Leave the pho restaurant to start the walking part of the tour. You will wander past bakeries, com tam (broken rice) restaurants and other intriguing local shops. As you walk your eating guides will start collecting snacks from local stalls and wandering vendors.
10:30 hrs: Arrive at a chaotic local market. Here you will see dried, pickled and fresh produce, as well as live seafood. We'll stop in a noisy eating area for a drink (usually a fresh coconut) and to cool down a bit before we hit the fruit section to learn about (and taste) a range of tropical fruits.
12:00 hrs: Arrive at Barbara and Vu's favourite temple (which is right next to the market) for a picnic lunch of all the snacks you've collected during your walk. We'll find a seat under a tree and your eating guides will prepare the picnic. When you've finished eating, we'll explore the temple where, if you're interested, you can get your fortune told using a strange system of numbered sticks.
13:00 hrs: Your tour guide will arrange for a taxi back to your hotel.

During the tour, your guides will buy some snacks from wandering vendors. These snacks could include giant rice crackers, green mango, quail eggs, duck embryo eggs and dried banana "paper". MEKONG DELTA TOUR
Your journey takes you to My Tho - the heart of the Mekong delta - famous for its vast rice fields and beautiful landscapes. Visit the Vinh Trang pagoda en route and stop at the banks of Tien Giang river.
Take a boat trip on the Mekong River to a local workshop where handicraft and sweets from coconut are being produced. Take a short ride on a horse carriage to one of the many orchards to taste some homemade honey-tea, savour fresh seasonal fruits and enjoy a traditional live music performance.
Proceed by sampan boats through the small canals and side arms of the river to observe the daily life along the river banks. Lunch will be served at a local restaurant before driving back Ho Chi Minh City.

MEKONG DELTA TOUR WITH CAI BE PRINCESS
Transfer to Cai Be, a 2.5 hour drive from Ho Chi Minh City. Embarkation on the Cai Be Princess boat, a comfortable sampan built in traditional style. The tour will begin with cruising through the floating market in Cai Be along the “Mighty Mekong”.
A delicious lunch will be served at Le Longanier, a superb Indochinese villa located in a lush tropical garden by the river.
After lunch, your sampan will proceed to Dong Hoa Phu canal, passing several islands famous for their fruit orchards. Stops on the way can be made at An Binh Ancient Church or at Tam Ho Bonsai Garden before returning to Ho Chi Minh City.

The tour continues with a visit to the craft village “Glance of Vietnam”. Taste some of the tea, enjoy soya bean curd cooked by the villagers and prepare for the tour. You will then visit the area “Vietnam – Country and People”, including “A Passage to the Origins”, “Altar of the Nation” and “Vietnam’s Declaration of Independence” area to learn more about the country’s history and culture.

Activities in the afternoon include a row along the river and visits to various craft quarters, such as the Do Paper-making quarter where you can get hands-on experience. CAN GIO MANGROVE FOREST BY SPEED BOAT
Pick up at the hotel and transfer to the boat pier for an Eco-Adventure speed boat tour to the Can Gio Mangrove Forest (UNESCO Biosphere Reserve). On the journey through the scenic canals down to the mangroves, the boat will briefly enter the Mekong Delta with a stop at a local riverside market. SAIGON EXPERIENCE AFTER DARK
Get ready for the Vespa, where the tour launches into a street food adventure. Your first stop is at Café zoom to "watch the world goes by" (quoted by The Lonely Planet) and enjoy a cocktail and appetizers (inclusive) before adventuring into favourite local eating spots. You will experience the nightlife of Saigon the way locals do, all from the back of a vintage Vespa scooter.
The tour will start with a ride to part Chinatown and then heading to District 4 through busy streets and alleys to see the night life of locals and enjoy street sea-food and cold drinks, places that foreigners would hardly venture to. Leave district 4 for district 3 through downtown district 1 to a famous Banh Xeo shop to enjoy the specialty of Saigon, and southern food with the locals. Then continue to a hidden Vietnamese-style coffee shop to have a taste of Vietnamese music. Afterward venture to a lively bar to enjoy drinks along with live music.

THE SEAFOOD TRAIL – A NIGHT EATING ADVENTURE
Meet your eating guide in the foyer of your hotel. Your guide will introduce you to your motorbike drivers, give you a helmet and check it fits properly and give you some quick instructions for riding pillion in Ho Chi Minh City traffic. (For those who take the scaredy-cat option, your guide will travel with you in a taxi to snail street, the location of your night time eating adventure)
18:45 hrs: arrive at the first stop, in one of Ho Chi Minh City's snail streets in District 3. Here you will sit on tiny plastic chairs on the sidewalk, learn how to do the traditional Vietnamese toast and sample a range of seafood, including some snails. This is tapas-style eating that allows you to taste a range of dishes that are usually enjoyed with a Vietnamese beer. Remember to pace yourself!
19:30 hrs – 20:00 hrs: walk down snail street to the second stop of the evening, another seafood place! The second “quan” has some different specialties to the first stop, which you will try, along with another drink or two.
20:30 hrs – 21:00 hrs: walk out of snail street and into District 10 for the final stop of the evening, another seafood restaurant. Here you will finish your meal the Vietnamese way - with a hotpot. There's also an option to take the wasabi oyster challenge.
22:00 hrs : walk back down snail street to the first stop to meet your motorbike drivers who will take you back to your hotel.
*Note:
Guest’s preferences will be taken into account on the Seafood Trail tours whenever possible (and within reason). On a tour you will usually sample some prawns/shrimp, clams, a couple of types of sea snails, mussels, scallops and crab.

CANCELLATIONS
• Refunds will not be given for unused or cancelled services after the tour arrangements have commenced.
• FIT (Individuals): Cancellation charges are calculated from the day the written notification is received by the company or agent as a percentage of the net total tour price as shown plus any surcharges (e.g. ticketed air sectors, other penalties imposed by suppliers such as hotels):
• Between 29- 21 days before departure: According to the costs incurred will be charged
• Between 20 days and 15 days prior to departure: 25% of package price
• Between 14 days and 8 days prior to departure: 50% of package price
• Between 07 days and 2 days prior to departure: 75% of package price
• 1 day prior to departure or no show: 100% of package price
• GIT (Groups): Cancellation of tours due to minimum number of participants will be advised 6 weeks before departure of the tour; in which case Happy Go Travel will offer an alternative tour of a similar standard or a full refund. Cancellation policy for GIT bookings will be advised separately case by case.
• HOTEL ONLY
• Between 29- 21 days before departure: no charge
• Between 20 days and 15 days prior to departure: 60% of accommodation price
• Between 14 days and 0 days prior to departure: 100% of accommodation price
• Certain Hotels impose stricter cancellation policies which will be advised separately.
